  Recipe for Shami Kofta 

 Ingredients 

 For the Kofta: 

  •  500 grams minced meat (beef or lamb) 
  •  100 grams chana dal (Bengal gram) 
  •  1 large onion, finely chopped 
  •  2-3 green chilies, finely chopped 
  • 1 tablespoon ginger-garlic paste 
  •  1 teaspoon cumin seeds 
  •  1 teaspoon coriander seeds 
  •  1/2 teaspoon black pepper 
  •  1/2 teaspoon garam masala 
  •  1/2 teaspoon turmeric powder 
  •  Salt to taste 
  •  Fresh coriander leaves, chopped 
  •  Fresh mint leaves, chopped 
  •  Oil for frying 
  •  For the Gravy: 
  • 2 tablespoons oil 
  •  1 large onion, finely sliced 
  •  2 large tomatoes, pureed 
  •  1 teaspoon ginger-garlic paste 
  •  1 teaspoon cumin seeds 
  •  1 teaspoon coriander powder 
  •  1/2 teaspoon turmeric powder 
  • 1/2 teaspoon red chili powder (adjust to taste) 
  •  1/2 teaspoon garam masala 
  • Salt to taste 
  •  Fresh coriander leaves for garnish 

 Instructions 

 1.Prepare the Kofta: 

   Cook the chana dal in water until soft. Drain and set aside. 

   In a pan, heat a little oil and sauté onions until golden brown. Add ginger-garlic paste and green chilies, and cook for another 2 minutes. 

    Add cumin seeds, coriander seeds, black pepper, turmeric powder, and salt. Cook for 1-2 minutes until fragrant. 

  In a food processor, combine minced meat, cooked chana dal, sautéed mixture, and fresh herbs. Grind to a smooth paste. 

   Shape the mixture into small balls or patties and shallow fry them in oil until golden brown. Set aside. 

 2. Prepare the Gravy: 

   Heat oil in a pan and sauté the sliced onions until golden brown. 

   Add ginger-garlic paste and cook for a minute. Add the tomato puree and cook until the oil separates. 

    Add cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Cook the masala until well blended. 

  Gently place the koftas into the gravy and simmer for 10-15 minutes, allowing the koftas to absorb the flavors. 

 Sprinkle garam masala and garnish with fresh coriander leaves. 

 3.Serve:   

Serve Shami Kofta hot with naan, roti, or rice.

 Malai Kofta Recipe 

Ingredients: 

 For the Koftas: 

  • 200g paneer (cottage cheese), grated 
  • 2 medium potatoes, boiled and mashed 
  •  1-2 green chilies, finely chopped 
  • 1 tbsp ginger, grated 
  • 2 tbsp chopped coriander leaves 
  •  2 tbsp all-purpose flour (maida) 
  •  1 tsp garam masala 
  • 1/2 tsp cumin seeds 
  •  Salt to taste 
  •  Oil for deep frying 
  • For the Gravy: 
  •  2 large tomatoes, pureed 
  •  1 large onion, finely chopped 
  • 1/2 cup heavy cream 
  •  1 tbsp ginger-garlic paste 
  •  1 tsp cumin seeds 
  •  1 tsp coriander powder 
  •  1/2 tsp turmeric powder 
  •  1 tsp red chili powder 
  • 1/2 tsp garam masala 
  • 1/4 tsp fenugreek leaves (kasuri methi) 
  • Salt to taste 
  • 2 tbsp oil or ghee 
  • Fresh coriander leaves for garnish 

  Instructions: 

 1. Prepare the Koftas: 

 In a bowl, combine grated paneer, mashed potatoes, chopped green chilies, ginger, coriander leaves, garam masala, and all-purpose flour. Mix well. 

  Form the mixture into small, smooth balls. 

   Heat oil in a pan and deep-fry the koftas until golden brown. Drain on paper towels and set aside. 

2.Prepare the Gravy: 

    Heat oil or ghee in a pan. Add cumin seeds and let them sizzle. 

  Add finely chopped onions and cook until golden brown. 

   Stir in the ginger-garlic paste and cook for a minute. 

    Add tomato puree and cook until the oil separates from the mixture. 

   Add coriander powder, turmeric powder, red chili powder, and salt. Cook for a few more minutes. 

   Reduce heat and stir in the heavy cream. Cook until the gravy thickens. 

    Add fenugreek leaves and garam masala. Mix well. 

 3. Combine: 

  Gently place the koftas into the gravy. Cook on low heat for a few minutes, allowing the koftas to soak up the flavors of the sauce.

    Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.

  •  6-8 boiled eggs, peeled 
  •  For Gravy:

  •  1/2 cup yogurt, beaten 
  •  1 tablespoon ginger-garlic paste 
  • 1 teaspoon cumin seeds 
  • 1 teaspoon coriander powder 
  •  1 teaspoon garam masala 
  •  1 teaspoon red chili powder 
  •  1/2 teaspoon turmeric powder 
  •  Salt to taste 
  •  2 tablespoons oil or ghee 
  • Fresh cilantro for garnish 

 Instructions: 

 1. Prepare the Kofta: 

   1. In a bowl, combine minced meat, chopped onions, green chilies, ginger-garlic paste, cilantro, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix well. 

   2. Divide the mixture into 8-10 portions. Flatten each portion and place a boiled egg in the center. Carefully wrap the meat around the egg and shape it into a ball. Repeat with all eggs. 

 2.Fry the Kofta: 

   1. Heat oil in a pan over medium heat. Fry the koftas until they are browned on all sides. Remove and set aside. 

 3.Prepare the Gravy: 

   1. In the same pan, add cumin seeds and let them splutter. 

   2. Add chopped onions and sauté until golden brown. 

   3. Add ginger-garlic paste and cook for a minute. 

   4. Add tomato puree and cook until the oil separates. 

   5. Stir in the yogurt and cook for a few minutes. 

   6. Add coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix well. 

   7. Add a cup of water and bring to a boil. 

 4. Simmer Kofta: 

   1. Gently place the fried koftas into the simmering gravy. Cover and cook on low heat for 15-20 minutes, or until the koftas are cooked through and the flavors are well blended.
